Blueberry Coffee Cake

Whatever happened to homemade coffee cake?  It seems it's been all but forgotten.  I love these easy type recipes on a lazy day when you can sit back and enjoy the aroma coming from the kitchen.  That will waken the senses & you are suddenly  hungry & craving that special coffee cake.  

I'm giving you 2 Blueberry Coffee Cake recipes.  The first I've had for years,  It's been one of my favorites.  I got the recipe from Eating Well.  The second recipe I got from Bisquick.  I haven't tried the Bisquick Recipe yet, but it looks like it is easier to make, & yields about the same.  The interesting thing about these recipes is the calorie count.  The first is about 275 calories per serving, while the Bisquick recipe is about 235 servings per recipe.    I'll let you be the judge.  Let me know which you like better.

Blueberry Coffee Cake
Cake
1      Large   Egg
1/2   Cup     Skim Milk
1/2   Cup     Nonfat Yogurt
3      T         Canola Oil
2      Cup     Flour, All Purpose
1/2   Cup     Salt
1 1/2 Cup    Blueberries - Frozen

Topping
3       T        Sugar
2       T        Walnuts - Chopped
1/4     t         Cinnamon

Cake  Directions:

1.  Position rack in center of oven & preheat to 400 degrees
2.  Coat the inside of an 8" square baking pan with nonstick cooking spray.
3.  In a large mixing bowl, whisk together egg, milk, yogurt & oil.
4.  Set a sieve on top of the bowl and measure flour, sugar,  baking powder, & salt.
5.  Stir the dry ingredients together while sifting them into the liquid mixture.
6.  Stir to blend.  DO NOT OVER BEAT .  Carefully fold in blueberries
7.  Turn batter into the prepared pan.

Topping
1.  In a small bowl, stir together walnuts, sugar, & cinnamon.
2.  Sprinkle over the batter
3.  Bake for 20 to 25 min, or until top is golden brown & a cake tester inserted in the center comes
     out clean.
4.  Let cool in pay on a rack for 10 mins.
5.  Cut into squares and serve warm.


The new Easy Blueberry Coffee Cake by Bisquick

2      C      Bisquick
2/3   C      Milk
2      T       Sugar
1       Lg     Egg
1 1/2 C      Blueberries, Frozen

Cake Directions:
1.  Spray 8" square pan with Pam.
2.  Mix first 4 ingredients together
3.  Spread in prepared pan
4.  Sprinkle blueberries evenly over batter
     (Be sure berries are well drained)

Topping

1/3   C   Bisquick
1/3   C   Sugar
1      T    Cold Butter
1/2   t     Cinnamon

Topping Directions:
1.  Mix topping ingredients until crumbly
2.  Sprinkle over berries
4.  Bake at 350 degrees for 30 to 35 minutes
5.  Serve warm.
