An American Classic with an Italian Twist

Italian Style Meatloaf
Ingredient

1 Lb Ground Serloin
1 Ea Whole Egg
Salt & Pepper to Taste
Italian Seasoned Bread Crumbs
8 Oz Ricotta Cheese
Grated Romano Cheese

Directions
1. Mix ground serloin, egg, salt, pepper, bread crumbs, & romano cheese together. The bread crumbs and egg are used as a binding ingredient. Just add enough bread crumbs to the meat and egg, so it will stick together easily. If you measure about a handful of bread crumbs, & 2 Tablespoons of cheese should do it.
2. Form meat in a rectangle on a sheet of wax paper.
3. Place ricotta cheese in center of meat. Keep it about an 1" away from the sides. Once you have it ready, roll it similar to a jelly roll. (Use the wax paper to help roll the meat loaf . It will be much easier that way.
4. Place meat seam down in a baking dish.
5. Bake at 350 - 375 for approx 40 45 min. ( Be sure you watch the meat loaf carefully, it may be done in less time.)
6. Serve with Spaghetti Sauce on top.
NOTE: You can also add diced onions mixed into your ground serloin. Ground serloin has less fat, so you won’t loose as much in cooking.

Pasta Pesto

I personally believe in time saving appliances. If God made a person smart enough to invent it, why shouldn't we use it? I also believe in a quality meal in as little time as possible. We're all busy with a million things to do & it seems everything is established by being somewhere with someone at a specified time and place. So -- we still have to eat, and McDonalds? Really? That's not even an option in my house.

Here is a quick easy & delicious meal.

1. Package of Knorr's Pesto Sauce Mix.
2. 1 # Pasta
3. 1/4 C Estra Virgin Olive Oil
4. 3/4 C Water
5. Enough salted water to cook pasta

Bring a large pot of salted water to boil. Cook pasta according to package directions.
While pasta is cooking. Add 3/4 c water & 1/4 c extra virgin olive oil in small pot. Wisk pesto mix in with oil & water. Bring Pesto sauce to a boil stirring constantly. Turn heat down and continue cooking for another 5 minutes. By the time the pasta is cooked your sauce is ready. Drain pasta & mix in sauce.

That's it. It is delicious, quick, easy and can be done for under $10.

The pasta can be your entree served with salad and garlic bread, or you can use it as a side dish. This recipe will serve between 3 and 4 as an entree. As a general rule of thumb pasta will double in size after cooking. Most restaurants will serve about 9 oz of cooked pasta per person as an entree. One pesto sauce mix contains about 3 servings, so add packets if you are serving more than 3.
